I can’t find the proper way to fasten hidden fastner steel. The instructions just say not to overtighten the screws. What does that mean? Are we talking vinyl siding loose or just not tight enough to strip out the screw? I put some on this winter and now it is buckling. I assume the screws were the problem. Can it be fixed now that it has buckled?

Are you talking about
12" snap-lock panels? Around here those are usually installed with bugle-head-type screws, and they definitely pinch the metal to the deck tightly.
If you install in cold weather, the metal will expand a little bit in the summer when it gets hot, and will "oil can", or buckle as you say. Better to install in warmer weather if possible, IMO.
