The family room in our home is a converted garage with a concrete slab floor. Our problem is this: the east side of our property (parallel with the length of the family room) slopes away from the house fairly steeply (the 5 feet between our house and the neighbor’s yard drops approx. 4-5 feet before levelling off). The earth that was under the corner of the slab is completely gone and shows no signs of stopping. Fortunately the slab hasn’t settled or cracked yet but it will eventually. We also have a chimney along this side of the house and it is separating from the siding, presumably as a result of the erosion of the hillside.
What is the best way to correct this problem?

Without seeing the problem, it's nearly impossible to solve it but here's a lame attempt.
First: stop the erosion. Put in a retaining wall, get rid of running water, or do whatever it takes to stop the soil from running away.
And to fis the problem, you'll have to fill in under the slab (obviously). There are companies that pump concrete under slabs to support them or in some cases even to lift them.
*how far has the chimney seperated, over how long a period of time? This have you worried? Has me worried, and I can't even see your house from here...sounds to me like you need to pursue Ryans word with i great haste.
*many alternatives to a concrete wall. There is the dry stacked stone wall, stone embankment, crushed rock embankment, cmu wall, brick wall, log wall, railroad tie timber wall, rock wall, vegetation-tied wall, river rock wall...this could be fun, remember? What if you left it alone until the chimney washed out, toppled over into the neighbors house and crushed his car, sued the general, collected insurance, and got a new house with the settlement? Sounds just like a presidential campaign...
