You want to make sure the house is dried out. Firms specialize in flood recovery and would be worth a conversation with.
Usually it takes removal of at least some drywall, and large fans to circulate air and dry the structure.
Until you can verify the moisture is reduced enough, any cosmetic coverings will only be a temporary measure.
You really want professional help on this.

This morning he described a rental house he had and the tenant sublet to a person who turned it into a grow house. He was asking if some half-measures were good enough. (patched the ventilation holes with metal, covered the ceiling with some wood so plaster would stick (house was so wet it would not stick to the original ceiling.)
Sounded like a structural nightmare to me.
