This is where the kitchen meets the flagstone patio. Previous seal was some type of tar rope that lasted 30+ years. My dad replaced it with aluminum channel and silicone caulk, but its not wedged in tight and deep like the rope was and caulk lifted in some spots. Quarter added for scale. What about expansion joint material thats used in sidewalks?

On some masonry/stone to wood applications, because of expansion and contraction, you might want to try a butyl rubber type caulk for a deeper penetration and more flexibility. Just a thought.
I'm not sure exactly what you want to replace--the dark strip tha tthe quarter is leaning against? If it is that wide, like you said, the expansion strips for sidewalks would work. There is also a polyfoam material that comes in coils of various diameters--it's called caulk backer rod. It's flexible and spongy and you stuff it into the crack and caulk over it. Some places may still sell "oakum" too--which is like rope and expands and seals when it gets wet. That can be tarred in place too, IIRC.
I think yer on the right track with the coins.
Whole row of 'em on edge would look like a really good TIG weld.

Concrete tilt ups use Sikaflex to seal the joints.

We use it to seal our pipe penitrations thru various materials.
Like Plumbill says, Sikaflex.
Just to clarify- you mean use Sikaflex to seal the aluminum channel? or does this stuff expand to fill a 1.5" gap? Also, there's about a dozen different flavors of this stuff. Do you know which one would be best? Thanks for the help.I think oakum was the original material. I searched on McMaster Carr and low and behold... is there anything they DON'T sell??? What a great company.

For the gap between the concrete and the aluminum (or the foundation behind the aluminum flashing).
http://www.sikaconstruction.com/tds-cpd-Sikaflex1CSL-us.pdf For the flashing itself:
http://www.sikaconstruction.com/tds-cpd-SikaflexATConnection-us.pdf At minimum you will have to clean everything that is there off. I think it would be better to completely remove what is there, clean the gap between foundation and patio, use the Sikaflex1CSL to seal that gap then come back and install new flashing using the SikaflexATConnection.

that would be a job for Vulcum 15 or sitka poly
