I am replying to your post, but I couldn’t find the reply button in the thread. I have used a soffit in the past (My own home) to try to avoid many instances of drilling joists. iIt is probably wrth the trouble if you don’t mind the look of a soffit.
It usually amounts to a longer run for electrical for example, may not always work for plumbing drain, and may work for your pex.
