How much time should it take to install composition tile on clean plywood? I know the price range per SF. I am considering having a handyman that charges per hour.

How Fast and How Slow?
OK. I have 2 areas.
Hallway w/ stairway landing in it. 94.5" x 322.5" minus stairway:
I82SF, 85 feet of edge.
Kitchen:
59 SF, 33 feet of edge
Two very small areas with lots of edge cuts is going to be slow work and a lot of waste. The floor guy probably knew what he would be gedtting into and was charging accordinly while you do not. 2/sf for installing underlayment properly is not expensive at all. For doiong it poorly, it sounds high. Your rejection of his price says onbe of two things about you. I won't detail them unless you ask.

Do you have any experience with composition tile?

You can frame a house in a day or 2, but it takes 3 to 6 months to finish it. You answered my personal message to you that you did not know what I was referring to. If you didn't know about composition tile, why post s reply about it?

Have not yet decided floor guy vs handyman. Maybe I should have said arch technician instead of handyman. Floor guys around here just don't want to do composition tile. Probably never had.The only floor guy that was willing to bid wanted to charge me $2/sf to install underlayment.. I want some of what he was drinking! He also grossly overestimated the square footage of the area. I am not talking about 10% extra tile just to be safe for waste.

Square foot pricing doesn't make much sense to me. $2/sq ft might very well be perfectly reasonable depending on accessibility, the working environment, the substrate, the choice of underlayment, the shape and number of cuts required... etc.
Composition tile is quite common around here, especially in commercial spaces. I think you should keep looking for a flooring company willing to do the job and just get some bids. Never mind about how much per sq. ft. they're charging, just compare bids.
The other option (besides doing it yourself) is to hire your handyman (arch technician?) and just pay him for whatever time it takes. However, if he can't give you a ballpark estimate, I would wonder about his level of competence.
