How would I go about removing cabinets from under granite countertops? Can it be done? I assuume I’d take out one case at a time and replace it.

I have to do that in the near future, I plan to lift the granite and install the cabs then reinstall the granite. Never thought of doing it with the counter in place.
Be very careful, some times the granite installers feel the need to slather the adhesive to the cabinets so that the granite doesnt slide off!
I'd try to have the granite taken up and then install my cabints. Make sure that you follow the exsiting granite "template" wont be easy to modify afterwards.

Do you know how the granite was installed to the cabinets? that will help to answer how to remove the old tops in order to minimize the chance of breakage.
You'll have to be especially careful around the seams.
Around here the most common practice is to use Silicone as an adhesive.
I'd start by taking a stiff putty knife and sliding it between the cab boxes and the countertop to break the bond.
I've also seen/done granite installed using Bondo as an adhesive and 1x blocks glued to the inside of the cabinets.
