All, I have a cathedral ceiling in my cabin with cans in it. They are new and rated for insulation contact. My insulators, namely myself and my father in law, didn’t do a great job of insulating around them. A fact not known until now and, of course, all the ceiling is finished. Can I just spray some of the expanding foam in the top (back) of the can to seal off the cold air entry points. Or will that cause them to over heat? Any other good ideas?

What you may find happen in cold weather (if you don't ins. above) is that the cans will sweat condensation, dripping down the ceiling and/or out the can.
Do you have an air travel area above to allow venting of the joist bay? Can you insulate above the can and not block that area?
3 screws on the inside of the can, near the bottom, will when removed-allow the can to drop out of the housing. Pull it down and insulate above. I'm not sure I would use spray foam, don't trust it eventho the can is rated for contact with insulation. You might not be able to remove it later to get at the junction box.
