Is the brick structural with 1" interior wood strapping to hold the plaster & lath or is it 2"x4" wood stud structure with brick veneer?
Is it a peaked roof with lots of attic space or low slope/flat with only rafter/ceiling joist spaces to hold insulation
It's tough to insulate brick homes, as many times there is very little air space to put insulation. Also water can get through a brick wall and needs a way out. Insulation can trap water inside the wall.
You might want to investigate slow rise foam which is designed to insulate existing walls without blowing the plaster off.
hire a pro, the more problems the more expertise is needed

Do you have brick veneer over traditional stud framing? If so, I've had pretty good luck having celulose blown in. They drill holes through the mortar joints and sheathing into several elevations in each stud bay and blow the stuff in through an adapter. Subsequent interior remodeling revealed decent fill in every bay.
