Kitchen beams

Is there an easy way to construct a kitchen ceiling with exposed beams; you know, a cottage look.  A general contractor friend tells me the drywallers would have a messy, difficult time installing drywall around the exposed wood beams.

    Don't use drywall, typical is to use car decking or other T&G wood flooring above - stain to suit.
