planning to build 3′ x 8′ eat-at kitchen island. Top will be 3/4″ solid walnut joined with splines & glue. Substrate will be 3/4″ ply. Top will be attached to substrate with screws in slotted holes (to allow for seasonal movement). Question, is 3/4″ ply strong enough to accomodate the 12″ cantilever necessary to provide leg room, or should I beef it up, maybe by sandwiching a second layer of ply? Thanks for the input.

You'll need more than 12" for comfortable legroom. I look for at least 16-18".
For anything over fourteen inches, you usually need supports like corbels, rods, or braces.

Maybe, if you run it perpendicular. Me? I'd use 5/4" walnut solid wood horizontal runners for braces and make the overhang at least sixteen inches. You can make them from the culled wood that isn't quite up to par for the top.
