I have been asked to replace a pie cut lazy susan in a base corner kitchen cabinet. The cabinet is going to stay but all of the lazy susan hardware and the door will be replaced.
The homeowners don’t want me to remove the counter top. Is it possible to install this stuff without taking the counter top of? If I can’t, they said they would like to go with fixed shelves.
I wanted to know if it would be possible before I order all the parts.

most of them can be inserted no problem.
Trick is to get the post vertical and plumb, as uneven weight will cause the unplumb post to cause general wierdness.
Gotta check what diameter will fit. site built cabs are often shallower and if they cut the back corner with a 45 degree plate, it might not have respected the possibility of a lazy susan,
As for contortionists, it's six of one and half of the other. measuring and fitting an ADJUSTABLE shelf, retro-drilling shelf pin holes, getting the freakin shelf in the hole and on the pins is just as difficult as installing a lazy susan.
Lazy susans lose so much storage space in that corner unit, and a shelf allows the obscure kitchen appliances to be stored in the back corners, that to my mind, the shelf wins out by a small margin for utilitarian purposes. The accessibility of stuff on the lazy susan is a matter of the clients perspective on how the kitchen works for them. And that's what it's all about.

There are rigs where the (non-rotating) shelf pulls out, giving you full access to 2/3rds of the space, and even some where the hidden part also pulls out as sort of a "train car".

Yes, they (AFAIK) are serviceable, removable, and can be installed in situ.
Yes it's possible. If this is the type where the door swings into the cabinet with shelves, you'll have to remove the door (usually just screwed on) and the rest should be easy.
Do youself a favor and put a kidney type in it's place with a separate door that bifolds, those pie-cuts never seem to work right.

Yes, doable, but find out WHY they want to replace it.
Some people just do not know how to use a lazy susan, it get beat up and they blame the manufacturer.

yes.One common problem I see is this example - we did a new kitchen a couple years ago with two LS, and came a complaint one isn't working.I figure fine, no sweat, just needs a tune up or the set screw iss slipping on the shaft. Sometimes happens with brand new hardware.Nope! Thay had it crammed with heavy glass cookery all piled on one side so that it was falling over and hitting the face frame and twisting on the pie platform to make the door attached want to tweak over a hair too.I had to demonstrate how I had designed the kitchen with this nice deep drawer right near the range for these heavy cooking pots, there, see how convenient that is? Now you have room for your lighter tupperware here on the LS. See how it works now?I swear, there was 100# on that one side of the pie.

The doors of the lazy susan were chewed up by dogs. The shelves are worn out particle board. The post was never attached at the bottom so it looks like it's been sliding around, beating itself up for years.It has to go.
Then you will probably want to make a new L-shaped base about 8x8 to mount the base hardware onto.
