Four vacation rentals on one shared well. Large holding tank With constant pressure pump. Running toilet shuts down well..If I’m reading this scenario correctly. No water in holding tank. Reset well, water on.
My question..Can I get a water leak(programmable?) shut off for each house,so that the whole system doesn’t go down.

If one running toilet runs the well out of water, then you need three more wells.

Have you had a "draw down Test" done on your well? maybe the well is overtaxed? is there a back flow check valve that is not working?
Probably easier to put a master shut off on each unit and shut off system between clients and fix the leaky toilet.

putting a shut off valve on a toilet is called Plumbing I01 , learned very early in life & also turn valve every 6 months to make sure it isent frozen up , Plumbing 102

I have one in my older home and it has easily paid for itself. Also, it lets you know when there is a slow leak you might not otherwise find quickly, such as under a sink. The downside is you have to install sensors in each bathroom, by the washer, under the kitchen sink, etc.

you can get a pressure control that shuts off the pump when it hits 5 psi so as to not pump the well dry
it has a manual reset lever on the side of the switch
they cost only a couple of dollars more than a regular one
for a pressure gauge i use stainless oil filled which we buy here for about $10 US
after getting half drowned once in the winter i never use anything else & have never needed to replace one in the last 20 years

I don't think you will find such an animal, primarily because of the flow rate involved with a leaking commode - it's not really a high flow rate. Yes it obviously adds up over time, but it is not a large flow.
If you could find an auto shutoff valve for the whole house which would actuate upon the toilet fill flow ------ the toilet would become unusable - when the toilet was flushed - the valve would shut off the flow!
Most other water consuming points would also be unusble because that pesky valve would be shutting down the flow.
Have I missed something?

Replace the valve in the leaky toilet with a Fluidmaster Leak Sentry. If the tank has a slow leak into the bowl, this valve will not allow the tank to refill. This is cheap and easy and will give you breathing room to fix things correctly.
