I’m redoing my bathroom and the floor is out of level by 3/4 of an inch and I’m wondering if I need to level it. The joist run north / south. Starting at the South/west corner the floor is at zero. As you head north, east and north/east the floor drops 3/4 “. One of the joist also has a slight hump in it. I’m having a mud floor put in. Do I need to level the floor before this is done or can I leave it as is?

You don't need to level it, especially if you're doing a mud floor. Properly installed, that'll level the floor.
You do need to make sure that the mud is thick enough at the high end; about an inch min. So the low end will be about 1-3/4" thick.
And you need to determine how that height will effect things at the doorway.
And you do have to determine if the subfloor and framing will support all the additional weight.
Hi Shep,The floor that I removed was a mud floor that was in good shape (no cracks). The joist are doug fir 2 by 5.5 ( this is an old house so the joist aren't consistent in size, but all are at least 2 by 5.5) All new joist are doubled 2 by 6. The joist span 8'. The sub-floor is 3/4" ply. According to the "deflecto" on the Johnbridge site I'm OK (though it probably doesn't factor in the weight of a mud bed).
With a well done mud floor you are good to go.

If your not up to a leveling the floor with a full mud base, and don't ming a little extra effort perhaps the following.
Take up the sub floor and sister onto the existing floor joists to get your floor level. That will also stiffen up your floor.
Let's not confuse the issue with facts!
