Hell yes. Stain while it's on the ground. 10 times faster. I just completed milling 4000 board feet of 1x12 pine siding to match my log home. This is for an addition. We have pre-stained about 1/3. We WILL stain the rest before the carpenters hang it.
2x8? Good grief. Good luck. You ought to be in some serious shape after that. These 14' 1x12's have just about killed me.
DO NOT BUTT JOINT unless you're into gaps.
Lay out the elevation to replicate post and beam with log fill in.
Divide the wall into even lenghts no longer than your longest 2x8 with vertical posts that stand proud or cover the joints. Do the same for the bottom and top horizontal beams.
Drill holes in the posts and beams with an 1 1/2" bit and plug with a wood dowel to give the illusion of pegged mortises.
Have the saw mill shape you outside corners out of solid squared timbers to finish off the illusion.

I hear you Gene about the butt joints...I am into full length full scribe...alas, maybe when I am more wealthy.
Do you have any experience with the siding that has the T&G cut on the ends as well as the sides? Any better with gaps? Yes, they will still shrink...
I have been planning to cut my trim so it will stand over the siding ends. Not sure why this isn't the norm with all siding.
Finishing on the ground sounds like a good idea.
