Do you guys usually use the longest ridge boards you can find or do you do the ridge in sections? ex. 2- 13′ instead of a 26′ or vise versa.

Depends on the circumstances. Since we have access to a forklift, I order the longest lengths possible. If it is just a 2x12, then we'll do the same whether we have a forklift or not. I can get KD 2x12 up to 26' and sometimes 28', but I'm not so sure I'd use it for a ridge.
We recently set a 30' ridge and it went it really nice
Thanks Tim. I'll just be using a 2x8 ridge.
Don't forget that the ridge needs to be the same depth of the cut rafter or greater. Or you can stick a 2x4 up there if your ridge isn't deep enough.

Either way is acceptable.
