I’m looking for a term, if it exists, for ashlar laid out in an irregular pattern and not in straight courses. There’s a house near mine built of dressed rectangular granite blocks of different sizes and shapes.

Sort of. It's off on a side street but only three or four blocks away from the gate called South Gate or Thayer Gate where the stone guard shack is.
