I’m putting up an addition with a 27′ width span x 20′ long. I’m considering using one lvl for the outside 20 footers. Should I double two for the middle? I plan on using 2x10x14 for joists across the 27′ width.

Not enough structural info (1-story, 2-story, support column spacing, etc) for me to give you feedback.
Take your plans to the yard where you will purchase the LVLs, they'll do a takeoff and run the numbers for you.
The service doesn't cost you a penny, it will give you peace of mind, and typically they'll generate a CAD drawing that you can present to your building officials.
