Putting an addition on well house. New section perpendicular to axis of old, therefore have to merge new shingles into old. Have cut out old shingles to shape of new section. OK – how the heck do I get under old shingles to put in new so valley is waterproof? Not much hair left from scratching my head!

You have to remove shingles back a fgood three feet from the valley center to install the valley metal with the underlayment and then reshingle to it like new.
But since you said this is a well house, I belive it is probaly so small that once you haver things removed back three feet, there isn't much left to go, so re-roof that whole side of the roof.

It's hard to do that without removing the shingles and putting them back or putting new back or you can pull the nails out and try sliding everything underneath but that's a Pain in the A$$.
Start from the top and take enough shingles out one by one and leave them on the side and then put the Snow and Ice down and run the other side underneath and then put the shingles back.
Are you planning on running the new valley underneath the old valley or putting a Copper Valley in? Whatever way you plan on doing the valley the easiest is to remove the old ones and do what you have to do and then put the old ones back or just put new ones in. The color might be different using new so if you can save the old ones put them back.
