What is the method for using thinset and mosaic tile. I used a 1/8 trowel to avoid squeeze-up but I am worried that the tile doesnt have enough to secure it.

1/4" square notch should be good for mosaics. The minimun you should ever use for ceramic tiles would be a 3/16" v notch, and that would be for your 4x4 light wall tiles. I don't think we have ever used less than 1/4" on floor tiles.
During installation occasionally remove one of the tiles you just set and see how much of the back of the tile is covered with thinset. If not enough, use a bigger notch. Too much squeeze out means you need a smaller notch.
is there a different mix for the thinset when you have to use such a thin amount, or maybe a little more dry. ?
I am definitely no expert on setting tile. I mix the thinset according to the directions on the bag. If I am using less than one bag I mix it so it has the same consistency as if I used one bag, which is sort of like thick toothpaste.
