new ceiling joists under existing plaste

I have a 7’Wx25’Lx 10’H hallway where the plaster ceiling walls are shot and I don’t really want to remove the lathe and plaster down to the studs and existing ceiling. Would you guys/gals nail a new “rim joist “and joist to the existing studs with the plaster still in place? I plan on droping the ceiling a 12” or so as to run new lighting/electrical and plumbing.
I would then either use 3/8″ or 1/2″ drywall on the walls and 5/8″ on the new, lower 2×8 16″o/c ceiling
what do you think?

sure, done it a few times. Skinning the walls is a little trickier. Trapping the plaster, trim details, jamb extensions on existing doors, etc.
I'm sure you've thought of all that so I'll shut up now.
Do the dropped ceiling all the time like that but why new drwall on the walls?

2 by 8 seems big for supporting a ceiling spanning 7 foot. Might even think about using metal studs instead.
