I’m planning to move an inside kitchen wall about 2ft. The wall is a bearing wall. The span is about 10 ft. long. How do I determine what size Paralam I will need.

The Paralam catalog.
Seriously, the manufacturers of engineered lumber all publish load tables.
Check your lumber species table. It should list all spans for each species, like yellow pine, fir and the paralam trees you're interested in.
Make sure to check for old growth parallam or second growth parallam trees too!
I am handicapped by not having a drawing in front of me, but it seems like the thing you need to be checking is the span ratings for loads on the cieling joists. Since you are changing from 12' to ten feet on one side of the wall, that implies that you are growing from 12' to 14' on the other side.
But you are moving a wall, not taking it out, right? So where is this parralam going?
