It's hard to say what your hourly rate should. It depends what your operating costs are. I too am in Bergen county. If your working in Saddleriver then you can charge more than in Bogota.
Figure what it costs you to run your business for the year, then figure how many hours you will work add overhead and profit and thats you rate.Don't forget to add in what you want to make not just operating costs.
I used to live over in that area on the Ny side. Bergen Co has many different pockets of wealthy and not so. It depends on where you work. If in Saddle River or Alpine I would say $45-50 or higher easy. As was posted though it depends on your skill level.
Are you guys quoting the hourly rate chargeable to the owner, the hourly rate chargeable to a GC as a sub, or the hourly wage?

If you are speaking of high end work in NYC meaning Manhattan then you are talking major bucks. I've worked it and most peoples eyes would bulge out if I qouted a number. "One measurement is worth a thousand expert opinions"
To owner a bit higher. GC depends. Long Island high end, owners pay high, just as high as Manhatten. In Princeton NJ, GC pays me $50, I ask $55 from owners. Bill out much higher on an estimate.

I'm on the North Shore of LI (Cold Spring HArbor).
The rates flucuate depending on the work and where it is.
If you wanna travel out to the HAmptons theres plenty of work but thats an hour and a half even from my house so you have to figure in three hours a day travel time and gas.
Out there you can get about $75-100 an hour steadily....the closer you come this way....less.
My guess is in NYC it'd be around $75 an hour.
