Plumbing a new house water line

I am building a new house, and was planning to use CPVC for the water lines with a brass dropear 90 screwed to the framing to screw all my nipples into. I have seen some builders using this blue and red tubing with crimp fittings. What is it, and is it any good? Pro’s and cons to either system?
