I am building a new house, and was planning to use CPVC for the water lines with a brass dropear 90 screwed to the framing to screw all my nipples into. I have seen some builders using this blue and red tubing with crimp fittings. What is it, and is it any good? Pro’s and cons to either system?

Consider cross-linked polyethylene (PEX) instead. Since it's an open system you don't need an oxygen barrier.
There are several manufacturers to choose from...one lead is AquaPEX by Wirsbo.
*I did CPVC in my whole house renovation but used plastic drop ears for all but the shower heads. Plastic drop ears were threaded 1/2" NPT but the nipple sealed via an O-ring vice the threading.In some jurisdictions you need copper within a couple of feet of the water heater so I just used copper from the main shut-off to about 4 feet past the WH. Then I transitioned to CPVC for the rest of the runs. A good web site for more info on CPVC is http://www.genovaproducts.com/
*We did an all-PVC house in 1971, my mother still lives there. No leaks, but it's an oddball, which makes it hard to find waterstops that fit.-- J.S.
*The colored pipe is probably pex or some similar brand. It works well and is easy to run but requires some specialized tools. I dont think it is accepted everywhere yet, do a search on one of the plumbing discussion boards and you will find plenty of info on it. I like it.
