It depends on the desired final result.
A lot of people want a melamine finish on the inside of kitchen cabs because it's easy to clean; but they still want a wood outside. For those people I use a two-sided OSB (melamine one side; finish-grade wood veneer on the other) or a similarly two-sided 'russian' plywood, which is made of 1/16" plys all through.
These sorts of materials are not often available in general lumberyards of big-box stores; you'll probably have to go to a cabinetmaker's supply house to find them. While you're there, make sure you pick up matching edge-banding for whatever exterior veneer you wind up choosing.

Cabinet plywood usually comes from specialty plywood and veneer suppliers, you'll have to check locally. For small orders I usually purchase from a local cabinet maker.

11 ply, or higher, Baltic Birch,Virola, Binuang, Igum, Mersawai, Almiciga... Imports are either 18 or 19 mm. If you can find poplar core, domestic cabinet grade ply, good for you. look for an AA, A2 or A3 grade.
I get mine from hardwood, hardwood plywood suppliers. Stay away from the 'lodepot' imoprts, they are seconds, thirds or worse.

Right there is where you're gonna have trouble. Cheap ply and cabinet ply are not the same thing. I use cabinet grade ply of whatever wood (cherry, oak, maple, birch, etc.) I need and I purchase it from a real lumber yard (or, if I need a lot, from a ply wholesaler) who will stand behind it and take it back if I find it's full of voids when I cut it. I don't worry about the price -- just the quality and the willingness of the dealer to make it right if things go south.
These days, even the ol' standby quality sources are getting some real junk. Like 1/2" that turns into two sheets of 1/4" as soon as you try to rip it. Sheesh!

I've been using C2 3/4 Birch lately for the inside of the cabinets. Finishes fine and I pay around $32 per sheet.

Atlantic Plywood in Albany has everything. You will need to set up an account, in order to buy from them.
Unless you are a business, they will only sell to you on a cash and carry basis.
