I’m setting up for natural gas for my new grill. Am I correct that any propane grill can be converted? How exactly do you convert the grill? Changing orifice size, etc. Main question is do I need to buy something from the grill manufacturer, or are these parts all available for any type grill? I’m sure people in this group have done it at some point in time. Also, if it matters, I’m at 7200 feet above sea level.

I converted our stove from NG to propane. The parts kit came with it, and consisted of replacement orifices. There was also a couple of adjustments inside the oven and broiler compartments, adjusting the air/gas mix I think. Took a couple of hours and worked out fine. I would contact the manufacturer for parts and instructions.
I think I can order the grill I was going to buy in either gas or propane, so that should make it almost idiot proof for me.

What you want is a stoticometric (sp?) mixture (actually a touch lean with about 1-5% excess oxygen). Which is MORE methane for a given air flow than propane.
This implies a FASTER velocity of LESS propane compared to methane. The orifice's function is to meter the fuel gas and impart momentum onto the surronding air. A SMALLER orifice means more velocity per mass flow of fuel and results in more air/fuel (needed for propane). A LARGER orifice gives less velocity per mass flow of air and gives lower air/fuel ratio (volume to volume) you need for methane.
So, if you have a propane grill and want to run methane, you need to find a LARGER orifice for the same grill - one designed for methane.
Hopefully, their manual or website gives a part number for a larger diameter orifice.
While one can modify/fabricate their own orifices, I advise against it. The cost of a new grill ($200-300) is much lower than the possible hospital or mortuary bills. I do it, but have a fair bit of theoretical and practical knowledge. (And I burned the hair off my legs once). If the manufacturer doesn't offer a natural gas conversion kit, buy a grill that does. Donate or gift the old one.
