What can I put on the pink 2 inch foam board (sorry forgot the brand name) to protect it from UV degredation ?This is insulating a monolithic slab.

Dirt, concrete or siding seem to be most popular choices. Is this insulating the slab from the air above it or the ground beneath it?
Just get it down, lay the rebar/wire, and then place the crete over it and the UV will never see it.

I presume you're insulating the edge of a slab. I have used cement board, self-adhesive foam-compatible membrane and parging. Not all at once.

Thank you for replying to my question about protecting foamboard. I did put 8 inch Hardie board fastened to the sill plate. Now I see that Hardie recommends the same 6 inch clearence from soil as does the building code . Any problems with cement board in contact with soil. Its pretty wet on the Oregon coast and carpenter ants and termites are a problem.

The reason Hrdi doesn't want ground contact is that it will wick up moisture, and that can transmit to frame lumber or freeze and cause separations within the structure of the product. Freeze/thaw cycles are the worst danger to what you have. Super painting can help, or a couple coats of Thorocrete. Sorry I misunderstood the application.

You're welcome.
I wasn't clear enough in my answer. I wasn't thinking about Hardie board but of a cement board like Durock. That is a USG product and widely available.

I used copper sheets, effective and inexpensive.
