I’ve always been careful about using pt wood indoors because of concern about outgassing or contamination. Yet pt ply is recommended for underlayment under durrock for tile countertops.
Since this is my kitchen i’m doing, what should I do about my concerns?
Is there an alternative to pt ply?

CDX would work fine.
I'd worry about chemical leaching.. CD, BC or ACX would work fine..
Life is not a journey to the grave with the intention of arriving safely in a pretty and well preserved body, but rather to skid in broadside, thoroughly used up, totally worn out, and loudly proclaiming
WOW!!! What a Ride!
Forget the primal scream, just ROAR!!!
That would be bad for the health of the kitchen and the occupants.
Hot water would be able to leach the chemical out. What sort of leak is most likely in a kitchen?
hot water - or its variant - steam.
