Slab size is 35-1/2 x 83-1/4. Came with some nice stainless McKinney hinges (originally in a steel frame). One trim guy says to just use 3/4″ jamb material, and get longer screws to go into the trimmer. I’m thinking more like 5/4 material. Will have hardwood on the interior side, plus a threshold.

yep, but are you using 5/4 or 3/4 material?
I'll assume adding 2 inches to width for 3/4 material, an extra 3/4 for the threshold on height, so maybe adding 3-1/4 to height? Part of my hesitation is thinking I need 5/4 to support the weight.

Just get out a piece of paper and draw it. Add up all the dimensions.
You know the door is 35 1/2". Add on both sides what is going there.
You'll get a lot of different opinions on how to hang a door here.
