When you guys frame a cathedral ceiling with a “ridge beam”, do you like hanging your rafters from the side or placing them on top of the beam? Any way better than the other?

First choice when possible, notch them on top of the beam. Eliminates the need for a metal hanger, which it should have if the ridge beam is installed flush.
More often than not the design calls for a flush beam though with cathedral ceilings.
I prefer to drop the beam, then lap the tops and nail them together securely.

I've done both. Although prefer the side mounted rafters method myself.
