In older homes like these, the main remodeling goal is often a more welcoming, more social, and more functional kitchen.

We can tell you, but there's a good chance we would be wrong. Go look at the door, or check the manufacturers spec sheet. It will tell you what the RO should be. Many people buy their doors and windows before framing begins so there's no mistakes.

Interior pre-hung door, 1" carpet clearance, rule-of-my-thumb = 38" x 83".
Nominal door width +2"; nominal door hieght +3".
Exterior prehung entry door with threshold - all bets are off - I don't have a thumb - seems like everybody is different.
Fasteddie has it right / safest - get the door first, or know what model you will be using, use manufacturer's recommendations.

Thanks for the response. I'll go with your advise, get the door and install per their specs. I do appreciate the input. I knew I could count on the list for the correct direction to take.

My rule of thumb is generally 2" wider and taller than the door. Check the suppliers recommendations. I will reduce L and W by 1/2" if I am sure of the door measurements. You will need enough room to shim and plumb. Generally this involves movement room.
You install a door in an RO only 1 1/2" bigger than the door itself? How thick are your jambs?
I add 2 1/2" to the height and the width. That's a bit more width than necessary but just enough height, and it's an easy rule for my guys to remember.
