I am roughing in the plumbing for a 34″ high bath vanity with a standard drop in sink. What height should the drain be stubbed out?

If you don't want to figure it exactly put it in at 19in. off the floor. This is low, but it will allow you to hook up the vanity; put it in too high and you are fxxxed, luck.

The self-rimming lav manufacturer should have a rough-in guide that looks like this:

In this case the dimension for the drain outlet is 14 5/8" down from the rim - your mileage may vary (check on-line via manfacturer).

To know about the bathroom sink plumbing rough in heights you must understand that sink drain lines should be between 18 to 20 inches. The water supply pipes must be some inches higher and it should be 20 to 22 inches from the bathroom or kitchen floor and it is generally installed to the drain line sides. This height is compatible with most bathroom sinks.
