Sagging sheetrock

The original 1/2″ sheetrock in the shop is unfinished and now sags in the middle, kind of like me. :>)

Not sure about age of material ~10-15 years, ceiling joists are 24″ OC.
Is it doomed to fail more with age to the point of needing replaced?

Or can I finish it off (tape,paint) and just live with it?
FWIW: shop is detached building, unheated.
