We are considering using Western Red Cedar tounge and groove siding on the exterior of house. Does anyone have an opinion on whether this should be sealed on either both sides, or potentially just the exposed side or not at all and what the consequences of each would be?

I'm about to do the same thing, although ours will be 8" beveled siding. I plan to put at least one coat of Sikkens Cetol 1 on the back side.

Pre-staining your siding is a good idea.Exactly how does one go about sealing 5000 or so linear feet of cedar lap siding---both sides? How is it done? Where and how do you rack it and dry it? How many acres of shop/driveway/lawn does one need to accomplish this? And how many of the 10-15 gallons ($45/gal.) of sealer get sprayed onto the ground as waste?How long does this take? How many dry/warm days are necessary? Just wondering.
The only siding material I do not back prime is Cedar shingles.
best way to do it is to buy it pre-primed or pre-stained from the mill/yard.
When that is not possible, I set up a pair of horses with painting ladders and helpers near the pallet delivered. first guiy brushes the back side and flips it over to guy B on the other side of the horses who brushes the face. The piece then gets restacked on a second pile. Clean stickers are handy.
By time they get about ten pieces or so done and ready to sticker for second layer, most are skinned over tack free.

There is something called the Western Red Cedar Association, which has a website and complete info on finishing WRC in various configurations.
In the process of doing that now. Just started this morning on 5000 lf of 1x8 T&G. Have had great results with Penofin Blue label. Back prime and all edges too. Will do second coat in place.
I've installed T&G siding horizontally, vertically and diagonally. Sealed or painted both sides and not. In every case the T&G has shrunk and it leaks. If a customer insists on using it, I make them sign a waiver.
Beat it to fit / Paint it to match
Call Michign Prestain. Not sure if they have exactly what you want, but they do have board lumber prefinished. Saves a lot of time and headache, and arrives stable and shrunk!
Pricing was, as I remember, worth it for the headaches saved.
