I have always gone by the rule, “semi gloss paint for bathrooms & kitchens”. I am remodeling our bathroom and would like to take down the sheen a notch. Would a “eggshell” finish be acceptable in a bathroom? Bath have a window and a bath fan if mostiure is an issuse.

Eggshell is fine, from where I'm standing.
The thing you need, in really humid conditions, is fungus-resistant paint. For our downstairs bath ceiling I mixed exterior paint fungicide additive into the ceiling paint, when I couldn't find suitable fungus-resistant paint. (Kids are unlikely to try to eat the ceiling.)
