sheet rock wall butts against a plywood wall. Do you tape both like it was all drywall or no. I thought maybe just “flat tape it” ..but then started wondering about the whole thing. Then started wondering the other way…so now I ask you.

I'd probably put a J channel on the rock. Or just rock up to the plywood and run a bead of caulk along the joint.
Depends on why thi sis happening and the moisture/thermal conditions.
Secure, with little movement likely, and I tape with paper tape but after using a sealer/bonding agent on the ply

Plan on paneling most of the plywood anyway. texturing the drywall. JUst wondering what to do if I didnt have the paneling going up
You could use a "J" trim ; which is what I use against brick and block walls. Or, for abutting a wood wall, you could also use a "L"shaped trim bead. The "J" requires no taping or mud, while the "L" requires mudding up on the drywall face only. This bead trim has a little offset built into it where it abutts the wood. It gives a nice, finished look.
