OK Cody. You've got my interest. I'm going to like you, I think.
Premixed and setting type.
Premixed comes on bucket or bag
Add just a bit( ounce or two) of water to either and mix smooth.
It sets by drying. Thick build will dry slow. alligator, and shrink. Drys slower in humid weather.
Some is called easysand. It is easier to sand because it has less bonding agent, which means it will not stick as well. OK for surfacing/skimcoating but not for setting tape.
But as you get good at using mud, you won't need to do much sanding.
Setting type you mix with water and it cures rather than drying. Durabond and easy sand both. Durabond 45, 60, 90 etc means that it will kick in about whatever number of minutes indicated by number in the name. It is stronger by far than premixed and for a handyman, a good deal. For instance, I can take the setting type easysand45 to do a small patch, and have it double coated, sanded, and painted in a half day. But you have to be ready to clean up and not let it go by on you. once it kicks in a bucket, say goodbye to the bucket.
And don't let half a bag sit around without sealing it up good in a plastic bag or throwing it out. Humidity from the air will do strange things to it and make you wish you hadn't ever seen it.

Pif, you left out Lightweight, and All Purpose, both in the ready mixed section. Lightweight cannot be used for the first coat ... it even states that on the bucket. Use All Purp for everything excvept the last coat, but even then the All Purp can be used.
