I am sheetrocking my basement ceiling and i am ready to put up the last piece. In the one corner of where the piece will go, there is a joist hanger that hangs down 1/8 inch. this is where the rock will butt the existing piece. Wondering if I should cut out around it and have taper just go over it? Or should I just cut out back of piece to be installed an 1/8th in. ? Or is there a better way? Thanks.

Cut the drywall and let the taper fix it. No big deal at all.
Shave the back
I would "mortise" the back of the drywall to accomodate the joist hanger. A wide chisel works well..1/8" won't reduce its strength significantly.
Shaving the back will be faster than dealing with a taper.
If you go look hard enough, I'm sure there is a new tool you need to complete the job.....
