I need to remove the bottom course of vinyl siding and make repairs to sheathing and perhaps more due to grade too high. Any tips on removing that piece such that I can put it back? Also thinking of using fiber cement instead and tucking under “new” bottom course of vinyl.

You can buy a tool at any siding supply house that "unzips" the interlocks on the siding and also helps zip them back together. Shouldn't cost you more than around 10 bucks.
