Hello there,
I have been asked to convert an existing bifold door to two doors that open outward. I would prefer NOT to mount any hardware to the top or bottom, but rather to the sides as shown in the attached diagram.
Any ideas on the type of hinge I can use here?

There are pivot hinges that mount to the frame available.
They can't get your Goat if you don't tell them where it is hidden.
I doubt the jamb is going to be plumb or straight. Why not just eliminate that drywall detail and use butt hinges and casing on a new jamb ?
If you don't remove the drywall, the hinge will become loose in a matter of months, or sooner, due to the door's weight and opening/closing action. Even if you screw them in tight (can't see mortising the leafs in drywall) the outer screws may only be biting in the wall drywall.
I'm with the others, remove the drywall, install a jamb. If they don't like casing, there are ways to make a casing-less doorway. Dado the jamb material to accept the drywall end is one way, though I've never tried it.

Soss hinges or cup hinges, but the projections might present a problem.
As light as bifold doors usually are, you may be able to use cafe hinges. The top bracket can be mounted inverted to allow for less top clearance.

What is going to stop the doors from swinging inward? How will the doors latch?
You are probably better off keeping the track, and using top and bottom pivots for each door. Mount a backer with some magnet catches to keep the doors closed. Thats the cheap fix.
If the customer wants double swinging closet doors, remove the bi-folds, re-frame the opening, buy regular doors/frame/ trim and install.
