I’m looking for the wisdom of some of you installers here. Would I be better to have seamless steel siding installed on my Minnesota house, or box(ed) steel, in 12’6″ lengths ? Do the corner covers used with seamless steel provide a tight, insect free and weather-proof corner ? What about expansion ? I have a 24 x 36 house with a 16 x 32 addition, which leaves one side of my house at 40 feet. Will seamless contract too much here ?

What do you mean by seamless? Since you have to use panels, you have to have joints. Do you mean "interlocking" verses "overlapping" steel panels?
Either way you will get significant expansion contraction. The issue is the fasteners and the channel material connections at corners, door and window frames, eves and mud sills. Your supplier or manufacturer is best to tell you the specs on each type. If you have openings, you will have vermin. A compatible metal screening has to be used or a foam blocking (most metal panel suppliers have the foam blocks)wherever critters can enter. Not so important in roof other than annual insect nests. At sill level its an issue.
