I’m installing a 40 inch range and I would like to know if I can get away with using a 36 inch hood (venting outdoors). I was told that it was ok as long as it ran at 360 CFM or more, but I’d like some second and third opinions. The next hood size is 42 inches and since mose ranges that big are professional or at least prof style, they’re much much more expensive.

That's only 2 inches per side of overhang. I've seen some hoods that had the hood all the way to the edge and some that had an inch or two of flat area before the actual funnel started. I would think that at 30 inches up from the range top, that extra couple inches would be a small issue. The choice of hood brand and CFM would have more of an effect.
