and crack. On a recent trip to the big city, I saw grout joints in capstones
filled with a synthetic material. Has anyone seen or used a product of this
type? If so, what is it and who makes it?

Epoxy grout may be your answer however it creates many tricky clean-up problems. Mapai makes it and I've seen it in many home improvement stores such as Home Depot. It may be very difficult to use with a pourous material like stone. You may also look at some latex modified grouts or various additives that are used for grout to withstand freezing.
