We are building the dream house and are considering using the Takagi tankless water heaters for all or part of our hot water needs. The question is should we use one TK2M or should we use two TK1?

I don't know that brand, but Iwould recommend that you solicit the opinion of plumbers in your area first. Here, they will refuse to install tankless because the hard water will soon impair their functioning.

Stutz, be very aware of the flow demands of all fixtures and appliances versus your life style.
Do more than one shower at a time; or when dishwasher running or when clothes waser running etc.? Compare the cost of a good high efficiecy gas fired hot water heater , including piping and flues to the same flow capacity of a few tankless heaters.
Do you plan on radiant floor heat, or water coil in a forced air system, thus having a dual purpose for hot water? Just some things to consider along with Piffin's comment on hard water. Paul
