I usually go 2 5/8 to the edge of the cabinet box. With the doors on it ends up 3 1/4 - 3 3/8.
I remember seeing the specs from an archi society, 3" total deep by 4" high.
So your 2 1/4 + 3/4 for door and a little space is dead on.

I'm with Piffin; I set toekicks at 3" from the door face. Most people don't stand with their knees locked, so in order for a person to have more than 3" of toe sticking out beyond where his knees are, he'd have to be wearing either cowboy boots or a pair o' size 17 Nikes....
