I would like to vent a playroom building with vaulted ceilings. The room has a finished interior and the building now needs a new roof. I use only a window unit A/C and Heat when the kids are using the room. It currently has a round window in each gable which could be replaced with an exhaust fan. Currently the room gets too hot and humid in this climate ( south Louisiana) to allow it to be very usefull. I would appreciate ideas and experience you have.

Since you mentioned a new roof the best thing now is to familiarize yourself the topic of venting/not venting a cathedral roof.
The seach box in the lower lefty hand of the screen after you scroll down the topics listing is the place to type in 'cathedral venting' and it will take you to a days worth of study.
