When building an addition, so that the new roof is below and following an existing overhang, is there an ‘ideal’ distance to have them seperated? More than several inches? The more the better?

Leave enough "comfort" room to get in there and flash against the wall, and shingle over to it. Visually, it always bugs me when its 12" or under, I personally feel 18" or more looks best, but much depends on the context.
Enough to get a roofing nailer, or swing a hammer underneath it :)

If you can't drop the roof line very much, here's what it can look like using the fascia of the original roof to counter flash. Depending on the siding, this method might prove longer lasting before maintainance. At any rate, this porch addition gives you an idea.
