In new construction when do you paint? Just after Drywall finish all ceilings and one coat on walls. Than finish after all flooring and trim installed? Just curious how other guys do it.

Depends. I've seen it done that way, but more typically (around here, anyway) the painter comes in after everyone else is done, and paints anything that doesn't move.
I have my painter in after drywall and before flooring, trim, cabinets etc etc.
Then she does two coats on all the trim before installation.
Then the trim and flooring and everything goes in.
Then a final coat on trim.
Three coats on the trim seems a bit much to me, but she insists and it turns out very nice every time.
She also sprays nothing. Trim rollers and brushes for everything. Old school but very effective and I've never once had cause to complain about anything her crew does.

Usually around here painter comes in after drywall, paints walls, trim and doors, then flooring is installed, doors & trim installed then painter does touch ups, quicker and easier I am told.Sometimes door jambs are installed before flooring.
Our painter sprays tinted primer after drywall. Sprays doors and millwork after install. Rolls walls and ceilings just prior to carpet.
My drywall guy sprays the ceiling and wall primer.
I try to set up an area where the painters can be pre-priming trim and doors.
Then we get out of their way to let them paint after trim is done.

From my observations ....
Jobs seem to get the first painting, and texture, as soon as the mud is dry. Then, after ecerything else is done (except, perhaps, trimming out the electrical), the painter returns for repairs and touch-ups.
i usually want my painter in last... i want him to caulk everything.... trim, baseboards, casing... and i want the caulk painted... and i want laps...

If I am installing base or trim I caulk and the painter touches up.
