I have clear pine window frames. What is the best clear finish to use on the inside to protect the wood from moisture damage (normal condensation) and is still non-yellowing? I fear that regular polyurethane will yellow over time. I considered lacquer, but decided it may not give me the moisture protection I need. Thanks.

A water-base polyurethane should give you the results you want.
Just be sure to try it on a sample first- because it doesn't have any oils in it, some people think its too clear. You have to get the wood color right before you top-coat.
